Our Cuisine

Unpretentiously authentic, our cuisine reflects what a holiday at The Vasilicos should feel like. 

Yannis, our in-house chef, designs his dishes based on the best of local, fresh produce, bringing cheeses and cured meats from the neighbouring islands of Crete and Naxos, and coaxing fishermen for their catch. Seasonal ingredients are used to create light mezze and salads, traditional Greek specials, vegetarian meals and delicious seafood dishes. Our sister winery Vassaltis Vineyards produces award winning Assyrtiko wine, and we complement our wine list with other delicious – mostly Greek – wines. Do not leave without sampling the sweet vinsanto digestif theat usually signifies the end of the meal, along with a tiny piece of baklava, handmade by us, of course.

THE VASILICOS BREAKFAST

Literally “Vasilicos”- fit for a king- our breakfasts are served on your private terrace weather permitting, or in the upstairs living room if not, as and when you want. Enjoy the best of Greece on English plates: yogurt, honey and aromatic summer fruits; pastries, breads and cereals; meats, cheeses… and the list goes on…

CALDERA CANDLELIGHT DINNER

After dusk, when the stars start twinkling, we will set up a private restaurant, just for two, on your terrace or in your suite. Choose one of our carefully curated menus, and pair with a Greek wine of your choice. This is the best of what you came for.

ROOM SERVICE

Our room service menu is carefully chosen to strike the perfect balance between the familiar and the Greek, the “must try” traditional delicacies and those all time classic pool-side dishes. Look out for the daily specials made to our grandmother’s recipes, or follow Yannis as he gets creative with the fantastic local produce. Kali orexi!!

COOKING CLASS

It is sad but true that most Greek grandmothers wouldn’t even tell their own daughters their precious secrets of what makes their moussaka so delicious. Which is why we are lucky to have Yannis instead!

YANNIS KOURTESIS

A cornerstone of the V-team since day one, Yannis Kourtesis sculpted and refined our cuisine to be the perfect culinary expression of The Vasilicos. Although he has moved on to other things, he remains in our heart of hearts. His love for The Vasilicos also remains intact, and he can often be spotted in our kitchen, passionately discussing recipes and presentations with Yannis, his protégé.

KYRKOS ZISIS

Passionate about food and detail, Kyrkos fell in love with The Vasilicos when he first visited, in 2008. Since then, he has devoted time and heart guiding and advising us while creating a name of his own in renowned restaurants around the Mediterranean basin and beyond. Today, you will find him in Brussels at his very own Gàstra, Rue de l’Enseignement 110, 1000 Bruxelles.
